I am international HoReCa and food production operations expert, specializing in restaurant performance, kitchen efficiency, and ready meals manufacturing.

For more than 20 years, I have worked internationally across the USA, Europe, the UK, Eastern Europe, and Central Asia, holding senior hands-on roles such as development chef, ready meals product designer, and factory kitchen manager.

 

My experience includes:

- food retail projects (iTesco Stores UK) - Factory Manager;

- inflight catering (121 Group (USA) - R&D head,

- dark kitchens, central kitchens (DC Norris UK) - Process Technologist and project manager Eastern Europe/CIA.

I have managed central kitchen and factory-kitchen facilities, with full responsibility for production processes, cost control, workflow optimization, and operational scalability.

I have in-depth, practical knowledge of restaurant kitchens, food manufacturing, and hotel F&B operations, covering the entire chain — from kitchen layout and process design to daily production, quality control, and profitability.

My expertise includes the implementation of modern food production technologies, such as cook & chill, sous-vide, R.O.P., M.A.P., blast chilling, retort, MAP & freeze, stir-fry systems, slow cooking, pressure cooking, steaming, pouch cooking, and pressure frying.

 

I provide consulting and practical training programs for restaurant owners, catering companies, and food businesses, focused on process optimization, cost reduction, and operational control, as well as professional training for chefs, helping them grow into process-oriented kitchen leaders and technologists.

Easy2Cook - innovative way of cooking in commercial kitchens

The method

I am the author and creator of the Easy2Cook concept — an operational kitchen model designed to help chefs and restaurant teams cook easily, consistently, and without stress during peak service hours.

Easy2Cook is based on the idea of “gastro-bots” — smart production units built around combi ovens, industrial rice cookers, sous-vide thermostats, and automated holding systems. These systems digitize the kitchen workflow and transform cooking into a controlled, repeatable, and scalable process.

The Easy2Cook concept enables the use of AI-driven planning tools for:

  • preparation of semi-finished products

  • ready meals and batch cooking

  • demand forecasting and load balancing
